Earlier this year I interviewed Chandler’s best cake bakery owner, Brandi Yantis of Custom Created Cakes by Brandi. Brandi is awesome and provides all of the delicious cakes for my cake smash sessions. She’s phenomenal and her cakes are out of this world. How did you get started in baking?
I was raised in the kitchen with my grandmother and uncles being chefs. So it was just natural for me.
What kind of training have you done?
I actually have an Associates Degree in Culinary Arts. I also did the Wilton classes at Michaels. Once I was done with those classes, I started to teach the same classes for about 6 years after that. I absolutely loved it.
Do you specialize in a certain kind of cake or dessert?
I specialize in fondant cakes and cupcakes for all occasions from baby showers to birthdays to gender reveal cakes to weddings and Quinceanera. I also so some yummy NY style cheesecakes that are delicious and thick. I can make them in cupcakes as well to there is no need to cut a cake.
What don’t you specialize in or offer?
I do not offer cookies, cake pops or any kind of candy chocolate items.
What kind of cake flavors do you offer?
Regular flavors:
- Marble, Vanilla, Lemon, Chocolate, and Strawberry
Fillings:
- Oreo, Lemon, Nutella, Vanilla, Banana, Chocolate, Raspberry, Strawberry, Cream Cheese
Specialty:
- Carrot, Almond, Red Velvet, and Mint Chocolate
Do you use fondant or buttercream or both?
I do offer both buttercream and fondant cakes. I do specialize in fondant cakes but can do both really. I also make my fondant from marshmallows so it is super yummy and edible.
Do you offer any substitutions for people with special dietary restrictions or allergies?
Yes! I offer vegan, dairy-free, gluten-free, and nut-free cakes.

Have you received any awards for your work?

When you’re not making amazing desserts for the entire East Valley, what do you like to do in your spare time?
I love spending time with my 26-year-old daughter and my 4-year-old granddaughter and my amazing boyfriend of 6 years. He and I also love to travel as often as we can. We visit a lot of places that we can scuba dive. Hopefully next year we will be diving with great white sharks which is amazing.
Lastly, what is your favorite cake to eat, and what is your favorite kind of cake to design?
My favorite 2 cakes that I make is my lemon cake with raspberry filling and my carrot cake with cream cheese frosting. Both are so delicious. All of my cakes are yummy but those are my personal favorites.
My favorite cake to date has to be the BB8 cake and the old fashion scuba divers mask and helmet I did 2 years ago. They were both just fun cakes to build and they came out amazing.
I am a perfectionist so that is a tough question for me to answer. I can always find fault in my designs only because I feel I can do better. So I try harder and get better at what I do. I have been doing cakes for 10 years now and I still feel like I am learning with every cake I make and customer I help.
